How to roast Cherry tomatoes



Roasting cherry tomatoes... aka crack


This year we had a really fucking fantastic summer, my tomatoes are going nuts.

I don't really *LOVE* tomatoes, I love tomato soup and sauce. Of all the tomatoes, cherry tomatoes are my least favorite. Partially because they are tasteless gooey gusher bites, and partially because my older sisters used to make them split and 'vomit' into my mouth while they held me down until I gagged *shudder*

So I never plant cherry tomatoes... in fact I generally avoid them

But this year there was a sad little mystery tomato plant that lost its tag on sale for $2 so I took a chance... and I was rewarded with a bazillion beautiful little bright orange cherry tomatoes.

I decided to convince my toddler they were edible and let him try them first JUST in case... and he eats them like candy because these are fucking delicious.

I decided to oven roast my plethora of cherry tomatoes and freeze them for future use in pastas, in salads, and in soups.

They might change my mind entirely about cherry tomatoes.  


My two year old "helped" me pick them - he ate as many as he put in the basket. Yes there is tomato goo running down my back.


We have a rule, once its in the basket it STAYS in the basket, but this doesn't stop him from shoving four or five in his mouth at a time and letting them ooze down my back *shudder* it isn't the grossest thing my toddler has done today, though, but we won't talk about poop and baking in the same post.

Once you pick a shit ton of tomatoes, and are thoroughly covered in toddler and tomato goo, find a baking sheet or five and make a cocktail. Very important step.



I made a vodka tonic, with rosemary simple syrup and a twist of lime.




Wash your tomatoes, remove the stems, and let them dry while you get your spices ready.

Spices:
  • Olive oil
  • Sea salt
  • Fresh cracked pepper
  • Whatever else you fucking feel like (I did garlic and rosemary)




Slice your tomatoes in half and start arranging them in neat little rows on a baking sheet, realize you don't have enough space for a shit ton of tomatoes in neat rows and just start shoving them wherever you can.














Brush the tomatoes with olive oil and sprinkle with spices



Roast these delicious little bastards in the oven at 300 F. for 45ish minutes

(I burned some, don't be like me... check on them)







Finished amazingness NOM NOM NOM

I am eating them like candy

Just add them to a freezer jar and grab a few as you need them. Cheers!
